Location of vineyards: Nebbiolo 100% N Castagnito - Piedmont - Italy. In the municipality of Castagnito there is a particular hill called Costa, historically suited for the vine. Nebbiolo, from which a wine of great finesse and elegance is obtained. The vineyard has an average age of 20 years and a deliberately very low yield per vine; this allows for an excellent raw material, essential for producing a quality Langhe Nebbiolo.
Soil: clayey-calcareous, with the presence of sand veins. Harvest period: beginning of October. Yield: 55 hl
Vinification: for the harvest, which in this vineyard is carried out in two steps spaced one week apart, we use perforated crates of about 18 - 20 kg to protect the integrity of the grapes in the best possible way until pressing.
Maceration takes place in steel fermenters in which the fermentation temperature can be adjusted and lasts approximately 4 - 5 days. At the end of fermentation and after the appropriate decanting, the wine rests in traditional containers for another six months of aging.
Sensory profile: it has a garnet red color, with an ethereal, composite, very elegant perfume; you can feel the violet, the morello cherry and, with the evolution, a particular spicy vein. It has a delicate, full and aristocratic flavor. It is a wine to be combined with roasts, game and aged cheeses.
